At Olive and Vyne, every bottle of our 25-Star Aged Balsamic Vinegar—both dark and white—originates in Modena, Italy, where time-honored methods have been passed down for generations. These artisan vinegars are the foundation of our naturally infused balsamic collection, prized for their depth, balance, and purity.

Our dark balsamic vinegar begins with carefully selected Lambrusco and Trebbiano grapes. After pressing, the grape “must” is slowly cooked in traditional copper cauldrons until it’s reduced to a rich concentrate. This reduction is then transferred to wooden barrels—often made from oak, cherry, or chestnut—where it’s aged to perfection, developing a bold, complex flavor and luxurious texture.

For our white balsamic vinegar, the same grape varietals are gently processed in a low-pressure, low-temperature environment to prevent caramelization. This preserves the vinegar’s light golden hue and crisp, slightly sweet profile. It, too, is aged in wood barrels, allowing it to develop a delicate yet vibrant flavor that complements a wide variety of dishes.
