Ingredients

  • 1 cup strawberries, leaves removed

  • 1 cup granulated sugar

  • 2 tbsp champagne vinegar

  • 5 cups seltzer for serving

Directions

  1. Add the strawberries and sugar to a medium bowl. Mash well with a fork, potato masher, or immersion blender.

  2. Cover and refrigerate for 24 hours, stirring occasionally to help the strawberries release their juices.

  3. Pour the mixture through a fine-mesh sieve into a clean bowl. Press the solids with a rubber spatula to release as much liquid as possible.

  4. Whisk in the champagne vinegar and Strawberry White Balsamic until the sugar is fully dissolved, about 2 minutes.

  5. Transfer the shrub to a jar, cover, and refrigerate until ready to use.
