Directions

  1. In a bowl, whisk together the Peach White Balsamic, Jalapeño Infused Olive Oil, Dijon, soy sauce, lime juice, garlic, onion powder, salt and black pepper.

  2. Reserve 2 TBSP of the mixture in a separate bowl for glazing. Add the chicken to the remaining marinade and turn to coat. Cover and refrigerate for 30 minutes.

  3. Remove the chicken from the marinade and allow the excess to drip away. Discard the used marinade.

  4. Heat a light drizzle of Jalapeño Infused Olive Oil in a large skillet over medium to medium-high heat. Add the chicken in a single layer and cook undisturbed for 3–4 minutes, until golden.

  5. Turn the chicken and cook for another 2–3 minutes. If using fresh jalapeño, add the slices to the skillet during the final 2 minutes.

  6. Reduce the heat to medium-low. Lightly brush the chicken with the reserved glaze and cook for another 1–2 minutes, turning once and adding more glaze as needed. Watch carefully, as the balsamic can darken quickly.

  7. Cook until the thickest part of each cutlet reaches 165°F. Transfer to a plate and rest for 5 minutes.

  8. Serve with fresh lime wedges and chopped cilantro, if desired.


Recipe Notes

  1. For even cooking, use chicken cutlets of similar thickness. Lightly pound them if needed.
  2. Marinate for at least 30 minutes and up to 4 hours. Longer marinating may affect the chicken’s texture.
  3. Reserve the 2 TBSP of glaze before adding the raw chicken.
  4. Brush on the glaze gradually—you may not need all of it. The balsamic can darken quickly, so reduce the heat before glazing.
  5. For more heat, add thinly sliced fresh jalapeño during the final 2 minutes of cooking. Remove the seeds for a milder kick.
  6. Let the chicken rest for 5 minutes before slicing to help retain its juices.
