A Fresh Berry Dessert for Summer Gatherings

Ricotta cake is known for its soft, moist texture and delicate sweetness. The ricotta keeps the cake tender without making it too heavy, while fresh berries add bright flavor and a naturally festive red, white, and blue look.

Raspberries bring a sweet-tart bite, blueberries add color and depth, and a light dusting of powdered sugar gives the cake a simple, elegant finish. It’s the kind of dessert that looks lovely on the table but still feels approachable and easy to serve.

Why Raspberry Dark Balsamic Works in Dessert

Balsamic may not be the first thing that comes to mind for cake, but a fruit-forward dark balsamic is a beautiful match for berries and creamy desserts. Olive and Vyne’s Raspberry Dark Balsamic brings rich berry flavor, balanced acidity, and the natural sweetness of an aged balsamic.

For this recipe, the balsamic is simmered with fresh raspberries to create a glossy drizzle that can be spooned over each slice just before serving. The result is sweet, tart, and just deep enough to make the cake feel more elevated.

Best Way to Serve This Ricotta Cake

This cake is best served fully cooled with the Raspberry Balsamic Drizzle added right before serving. That keeps the cake soft and pretty while giving each slice a bold berry finish.

For an extra festive presentation, add a few fresh raspberries and blueberries on the plate, then finish with a light dusting of powdered sugar. It’s simple, but it gives the dessert a fresh, summer-ready look.

Make-Ahead Tips

This ricotta cake can be baked ahead of time and stored covered until you’re ready to serve. The Raspberry Balsamic Drizzle can also be made ahead and refrigerated separately.

When serving, bring the drizzle to room temperature or warm it slightly so it spoons easily over the cake. Wait to add the drizzle until the last minute so it doesn’t soak too far into the cake.

A Simple Fourth of July Dessert

With fresh raspberries, blueberries, powdered sugar, and a Raspberry Dark Balsamic drizzle, this cake is an easy way to bring red, white, and blue to the dessert table without relying on heavy frosting or food coloring.

It’s soft, bright, berry-filled, and just sweet enough — a summer dessert that feels right at home at a holiday cookout, afternoon tea, or casual patio dinner.

Ingredients

For the cake

  • 1 1/4 cups granulated sugar

  • 3/4 cup unsalted butter, softened

  • 15 oz whole milk ricotta cheese, drained

  • 3 large eggs

  • 1 tsp vanilla

  • 1/2 tsp baking soda

  • 1/2 tsp kosher salt

  • 1 1/2 cups all purpose flour

  • 1 cup fresh raspberries

  • 1 cup fresh blueberries

  • 1 TBSP powdered sugar, for dusting

For the balsamic drizzle

  • ⅓ cup Raspberry Dark Balsamic

  • 1 cup fresh raspberries

  • 1–2 tsp granulated sugar, optional

  • Pinch of salt

Directions

  1. Preheat the oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper if desired for easier removal.

  2. In a large mixing bowl, beat the sugar and butter together until light and creamy.

  3. Add the ricotta cheese and mix until smooth. Beat in the eggs, one at a time, then stir in the vanilla extract.

  4. In a separate bowl, whisk together the flour, baking soda, and salt.

  5. Gradually add the dry ingredients to the ricotta mixture and stir just until combined.

  6. Gently fold in the raspberries and blueberries, being careful not to overmix or crush the berries too much.

  7. Transfer the batter to the prepared pan and smooth the top.

  8. Bake for 50–60 minutes, or until the cake is golden and a toothpick inserted near the center comes out clean or with just a few moist crumbs.

  9. Let the cake cool in the pan for 10–15 minutes, then carefully remove and transfer to a wire rack to cool completely.

  10. While the cake cools, make the Raspberry Balsamic Drizzle. Add the Raspberry Dark Balsamic, raspberries, optional sugar, and a pinch of salt to a small saucepan over medium-low heat.

  11. Cook for 5–8 minutes, stirring occasionally and gently pressing the raspberries as they soften, until the mixture becomes slightly thickened and syrupy.

  12. Remove from the heat and let the drizzle cool slightly. For a smoother sauce, strain out the seeds if desired.

  13. Once the cake has cooled, dust lightly with powdered sugar. Slice and serve with the Raspberry Balsamic Drizzle spooned over each piece.

Equipment

  • 9 inch springform pan

Recipe Notes

  1. For best results, use whole milk ricotta and drain off any excess liquid before adding it to the batter.
  2. Fresh berries work best in this cake. If using frozen berries, do not thaw them first, and expect a little extra color bleeding.
  3. The Raspberry Balsamic Drizzle can be made ahead and refrigerated until ready to serve. Warm slightly or bring to room temperature before spooning over the cake.
  4. For a smoother drizzle, strain the sauce after simmering to remove raspberry seeds.
  5. Add the drizzle just before serving so the cake stays soft and pretty rather than soaking up too much sauce.
