Ingredients

For the salad



  • 6 cups cubed seedless watermelon

  • 1 English cucumber, halved lengthwise and sliced

  • ½ cup crumbled feta cheese

  • ¼ cup very thinly sliced red onion

  • ¼ cup fresh mint, thinly sliced

  • 2 TBSP fresh basil, thinly sliced

For the Raspberry Lime Dressing

Directions

  1. In a small bowl or jar, whisk together the Raspberry Dark Balsamic, Persian Lime Olive Oil, salt, and black pepper. Set aside.

  2. Add the watermelon, cucumber, red onion, spearmint, and basil to a large serving bowl.

  3. Drizzle the dressing over the salad and gently toss to combine.

  4. Add the crumbled feta and give the salad one more light toss, being careful not to break up the watermelon too much.

  5. Serve immediately, or chill briefly before serving.


Recipe Notes

  1. For the freshest texture, prep the watermelon, cucumber, onion, herbs, and dressing ahead of time, but wait to toss everything together until just before serving.
  2. Add the feta last and toss gently to keep the salad from getting watery or breaking down.
  3. If using a smaller watermelon, about 1½ to 2 pounds of cubed watermelon should give you close to 6 cups.
  4. For a slightly different flavor, Meyer Lemon Olive Oil or Basil Olive Oil can also be used in place of Persian Lime Olive Oil.
