Matured in a dolium (an ancient jar), Cœur Saphyr is the union of Pinot Meunier and sapphire. The wine is matured in a jar containing a double-cone sapphire on the inside and a rough sapphire on the outside, to give the wine a unique energy. Both viticulture and vinification are carried out according to biodynamic principles, in harmony with the phases of the moon, and the wines are the product of a controlled dynamisation process.
