Three bean salad is a dependable make-ahead favorite, but this version trades the traditional sugary dressing for a brighter, more flavorful Olive & Vyne combination.

Scallion Infused Olive Oil gives the vinaigrette a fresh, savory foundation, while Mandarin Orange White Balsamic adds gentle citrus flavor and balanced sweetness. Lambrusco Red Wine Vinegar brings an additional layer of acidity, and Dijon mustard helps the ingredients come together into a dressing that coats every bite.

Green beans, chickpeas, and kidney beans provide a satisfying mix of colors and textures. Crisp celery, red onion, garlic, and fresh parsley add freshness and crunch, creating a salad that feels hearty without becoming heavy.

Ingredients

Salad



  • 1 (15-ounce) can cut green beans

  • 1 (15-ounce) can chickpeas

  • 1 (15-ounce) can kidney beans

  • 2 celery ribs

  • ¼ cup red onion

  • 1 garlic clove

  • 2 TBSP fresh parsley

Mandarin-Scallion Vinaigrette

Directions

  1. Drain and rinse the green beans, chickpeas, and kidney beans. Set them aside to drain thoroughly.

  2. Thinly slice the celery, finely chop the red onion and parsley, and peel and grate the garlic.

  3. In a large bowl, whisk together the Scallion Infused Olive Oil, Mandarin Orange White Balsamic, Lambrusco Red Wine Vinegar, grated garlic, Dijon mustard, salt, and pepper.

  4. Add the drained beans, celery, red onion, and parsley to the bowl. Toss gently until everything is evenly coated in the vinaigrette.

  5. Cover and refrigerate overnight to allow the flavors to develop.

  6. Stir gently before serving and adjust the salt and pepper if needed.


Recipe Notes

For the best flavor, prepare the salad the day before serving. If time is limited, refrigerate it for at least 2 hours.

Two tablespoons of basil pesto may be substituted for the fresh parsley.

Stir the salad before serving to redistribute the vinaigrette.

Store leftovers in an airtight container in the refrigerator for up to 4 days.
