Mango Peach Breakfast Bars

Tangy, tart, yet slightly sweet dried peaches and mangoes combine with healthy oats and nuts for an easy breakfast/snack.

Ingredients
Dry Ingredients

2 C Oatmeal

1 C All-purpose Flour (or GF Flour blend

1/4 C oat bran

3/4 C brown sugar, packed

1/2 tsp fine sea salt

1/2 tsp ground cinnamon
Mix-Ins

1/2 C finely chopped dried mango (no sugar added

1/2 C finely chopped dried peaches
-
1/4 C raw unsalted pumpkin seeds
-
2 TBS chia seeds
-
1 TBS ground flaxseed (optional)
Wet Ingredients

1/2 C White Peach Balsamic Vinegar
-
1/4 C Blood Orange EVOO
-
1/4 C Greek Kalamata EVOO
-
2 Eggs (or egg replacer), slightly beaten
-
2 TBS milk/milk substitute
Directions
Preheat oven to 350º. Line a 9”x13” baking pan with parchment paper. In a large bowl, mix all the dry ingredients together until evenly distributed. Add the dried fruit and seeds and mix again until fruit is evenly mixed and coated.
In another medium sized mixing bowl, whisk together the wet ingredients. I like using half Blood Orange and half EVOO so it’s not too strong of a citrus flavor, but 1/2 C of only one kind can be done as well. Pour into the dry ingredients and stir together. Mixture will be sticky.
Spoon mixture onto the baking sheet and press with a spoon or spatula until the mixture is evenly spread on the pan. Bake for 25-30 minutes or until the top gets slightly golden. Let cool slightly and then slice into desired thickness for your bars. Let cool completely before separating the bars. Store in an airtight container for up to one week or wrap individually with plastic wrap and freeze for up to 3 months.
