Baked Shrimp and Orzo with Feta and Tomatoes

Ingredients

1 TBS Scallion Olive Oil

1 red onion, chopped fine

1 red bell pepper, stemmed, seeded, and cut into 1/2 inch pieces

2 garlic cloves, minced

2 tsp chopped, minced, fresh oregano

2 C Orzo pasta
-
Pinch of Saffron Threads
-
3 C Chicken or Vegetable broth
-
1 (14.5 oz) can diced tomatoes, drained, with juices reserved
-
1 pound extra large (21-25ct) shrimp, peeled, deveined, and tails removed

1/2 tsp fine sea salt
-
1/4 tsp fresh ground pepper

1/2 C frozen peas
-
3/4 C fresh crumbled feta, or more for taste

2 scallions, sliced thin

lemon wedges for garnish
Directions
Adjust oven rack to middle position and heat oven to 375º F. Heat Scallion Olive Oil in a 12-inch oven safe nonstick skillet over medium heat until shimmering. Add onion and bell pepper and sauté until veggies are tender, approx 5-7 minutes. Stir in garlic and oregano and cook until fragrant, 30sec to a minute. Stir in orzo and saffron and cook, stirring often, until orzo is lightly browned, about 4 minutes.
Stir in broth and reserved tomato juice, Bring to a simmer, and cook, stirring occasionally, until orzo is al dente - about 10 minutes.
Pat the shrimp dry with paper towels and sprinkle with salt and pepper. Stir shrimp, peas, and tomatoes into orzo mixture in the skillet. Sprinkle feta evenly over the top. Transfer skillet to the oven and bake until the shrimp are opaque throughout and feta is lightly browned, about 20 minutes.
With oven mits/pads, carefully remove skillet from oven and place on a heat safe surface or trivet. Sprinkle scallions on top and serve with lemon wedges and a drizzle more of Scallion Olive Oil or Oregano Olive Oil

This recipe can be made with either Scallion or Oregano Olive Oil. Both are great options!
