Balsamic Chickpeas

Balsamic Chickpeas

A Sweet, Savory Snack with a Little Kick

These Balsamic Chickpeas are a simple, flavorful appetizer that brings together sweet, tangy balsamic and savory chili heat in one easy bite. Olive & Vyne Blackberry Balsamic Vinegar gives the chickpeas a rich, fruity depth, while Garlic Chili Olive Oil adds warmth, garlic flavor, and just enough spice to keep them interesting.

They’re easy to prep, easy to roast, and perfect for sharing. Think game day, wine night, snack boards, casual gatherings, or anytime you want something a little different from the usual chips and dip.

Why Chickpeas Work So Well

Chickpeas are hearty, satisfying, and naturally mild, which makes them a great base for bold flavor. Letting them marinate in Blackberry Balsamic gives them time to soak up that sweet-tart richness before roasting.

Once they hit the oven, the Garlic Chili Olive Oil helps the outside roast up with savory flavor and a little warmth. The result is a snackable appetizer that feels wholesome, flavorful, and fun without being complicated.

A Feel-Good Appetizer Option

This recipe is a great example of how simple ingredients can turn into something crave-worthy. Chickpeas are naturally plant-based and filling, making them a nice option for guests who want something a little lighter but still satisfying.

It also fits perfectly with what we love at Olive & Vyne: making healthy delicious. With the right balsamic and infused olive oil, even a humble can of chickpeas can become a bold, crowd-pleasing appetizer.

How to Serve Balsamic Chickpeas

Serve these chickpeas warm or at room temperature as a snack-style appetizer. They’re delicious on their own, but you can also add them to a small grazing board with cheese, crackers, olives, fresh veggies, or toasted bread.

They would also be great sprinkled over a salad, tucked into a grain bowl, or served alongside roasted vegetables like our Garlic Chili Roasted Broccoli. For a larger meal, pair them with grilled meat, tofu, or vegetables made with our Huckleberry & Garlic Chili Marinade.

Other Pairings to Try

Once you’ve made this version, you can easily change the flavor by swapping the balsamic and olive oil pairing. Chickpeas are mild enough to work with sweet, savory, citrusy, herb-forward, or gently spicy combinations.

A few pairings we’d love to try:

Mandarin Orange White Balsamic + Basil Olive Oil
For a bright, fresh version with a citrusy finish.

Fig Dark Balsamic + Tuscan Herb Olive Oil
For a savory-sweet pairing that would be perfect on a Mediterranean-inspired snack board.

Garlic Balsamic + Italian Tomato Blend Olive Oil
For a bold, Italian-style version with rich tomato and garlic flavor.

Pomegranate Balsamic + Greek Koroneiki Olive Oil
For a clean, fruit-forward option that lets the balsamic shine.

Jalapeño Lime White Balsamic + Garlic Olive Oil
For a zesty, lightly spicy version that would be great with tacos, bowls, or game day snacks.

Raspberry Balsamic + Lemon Olive Oil
For a bright, tangy option that would be delicious over greens or served as part of a spring/summer appetizer spread.

Ingredients

  • 1 - 15 oz can Chickpeas

  • 1/2 cup Olive and Vyne Blackberry Balsamic Vinegar

  • 2 TBSP Olive and Vyne Garlic Chili Olive Oil

  • 1/2 tsp sea salt

  • 1/4 tsp ground black pepper

Directions

  1. Drain and rinse the chickpeas and place them in a large bowl. Pour the balsamic vinegar over the chickpeas and toss to combine. Cover with plastic wrap and place the bowl in the fridge for a least 2 hours to marinade.

  2. Once the chickpeas have soaked in the balsamic, pre-heat your oven to 375 degrees. Line a baking sheet with parchment paper. Drain the chickpeas to remove any extra balsamic and place them back in the large bowl.

  3. Add the olive oil, salt and pepper to the chickpeas and stir until evenly coated. Transfer to the prepared baking sheet and spread them into an even layer.

  4. Bake for 25-30 minutes, stirring once after 15 minutes. Allow to cool slightly and enjoy!
