Smoked Salmon Cucumber Bites
Ingredients

4 -5 English Cucumbers

1 pkg Cream Cheese, room temp

1 8oz package Sour Cream, room temp

2 TBS Starlight Herb's Dynamic Dill Dip

1 TBS White Garlic Balsamic
-
1 package Smoked Salmon ( about 4oz)

Fresh Dill for garnish
Directions
Dill Cream Cheese Mixture
In a mixer, mix the cream cheese, sour cream, dill dip, and Garlic Balsamic on high until smooth and creamy. This can be prepped up to two days in advance. Don’t assemble until immediately before serving, or the cream cheese and cucumbers will seep.
Assembling
Wash and then slice the English cucumber in half. Scoop out the middle of the cucumber (will look like a long skinny canoe) for the filling. Spoon the filling in the recess of the cucumber and refrigerate for at least 30 min. Once set, slice the cucumber boats in 3/4” to 1” slices. Take a small piece of smoked salmon and place on top of the sliced bites. Garnish with fresh dill and serve immediately.
