Crunchy, delicious, and healthy - its a win all around. Sautéd jalapeños and onion combine with shredded carrots, broccoli slaw, and chopped chicken for the filling. And sesame oil and Jalapeno Lime Balsamic join for a mouthwatering sauce!

Ingredients

1/3 cup lime juice

2 Tablespoons honey

1 Tablespoon sesame oil

2 tablespoons Olive and Vyne Garlic Olive oil

1 small onion chopped fine

1 jalapeno pepper, minced

2 cups chopped cooked chicken
-
2 large carrots peeled and shredded
-
2 broccoli stalks, peeled and shredded

1 Tablespoon minced mint leaves
-
Salt & pepper to taste

1 head lettuce separated into whole leaves (butterhead or green leafy lettuce)

Jalapeno Lime Balsamic Vinegar

Sweet Chili Sauce or Sriracha optional for serving for a little more heat

Directions
Combine lime juice, honey and sesame oil in a small bowl and set aside. Heat Garlic olive oil in a large skillet over med heat, add onions and cook for a couple of minutes. With heat at medium, add jalapeño, stir together, and cook for another 2-3 minutes. Add chicken and shredded vegetables (carrots and broccoli) and cook until heated through, about 3 minutes. Add the lime juice mixture and mint, stirring together just until heated through. Season with salt and pepper to taste. Spoon chicken-lime mixture onto lettuce leaves and serve with a drizzle of Jalapeno Lime Balsamic Vinegar and a couple of dashes of Asian Flair on top of each one. Optional dipping: Sweet Chili Sauce
