Pepperoni, salami, cherry tomatoes, chickpeas, olives, plus so many more ingredients this salad has it all. Plus the simple dressing of our olive oil, balsamic, dash of herbs and a tiny dollop of dijon mustards just adds that perfect zip. This salad is hearty enough it can be either a lunchtime or dinnertime salad.

Ingredients

Handful of mixed greens

4 slices of pepperoni, quartered

4 slices of salami, quartered

1/4 C chickpeas, well rinsed and drained

4 Castleveltrano Olives, quartered lengthwise

5 Cherry tomatoes, halved lengthwise

6 thin slices of cucumber, quartered

1-2 slices of provolone, cut into small strips/squares

Forkful of Sumac Marinated Red Onions

3 TBS EVOO
-
1 TBS 25 Star Dark Balsamic

1/2 tsp Starlight Zesty Italian Seasoning

1/2 tsp Honey & Balsamic Dijon Mustard
Dressing
Directions
Whisk the EVOO, Balsamic vinegar, mustard, and Zesty Italian seasoning together and set aside.
- Place the lettuce in an individual salad bowl. Sprinkle on top all the goodies. Drizzle the dressing over it, lightly toss, and grab a fork and dig in!
