Directions
Make the starter
Make a starter that rests overnight at room temperature: combine 1 cup Bread Flour with 1/2 cup cool water and 1/16 tsp instant yeast.
Bread Dough
The next morning, combine the starter with the bread dough ingredients.
Mix and knead to form a smooth dough. It'll be very slack, I suggest kneading in a mixer, rather than by hand.
Place the dough in a bowl, cover, and let rise 1 hour.
Fillings
After the hour, gently deflate and knead in fillings.
Bake
Place dough into greased bread pan and cover , allowing loaf to rise for approximately 1 hour.
Heat oven to 350º and bake for 50 - 60 minutes. Internal temp = 190º. Remove from oven, let rest for 5 minutes, then remove from pan and cool before slicing.
